Applesauce Date Nut Bread



¾ cup chopped walnuts or pecans

2 eggs

1 cup chopped dates or prunes

1 tsp Stevia powder

2 TB molasses

1 ½ tsp baking soda (aluminum free)

¼ tsp sea salt

1 1/2 cups whole wheat flour

1 cup applesauce

3 TB extra virgin olive oil

1 tsp vanilla extract

  1. Combine walnuts, dates, baking soda, salt, applesauce, and olive oil in a large bowl and mix well. Let stand for 20 minutes.
  2. Add flour, sweeteners, eggs, and vanilla.  Mix well.
  3. Pour batter into a lightly greased loaf pan (9x5” works best)
  4. Bake at 350º for 1 hour, or until bread tests done.
