Artichoke Mashed Potatoes


4 (or more) large baking potatoes, peeled & quartered

2 jars artichoke hearts, drained

1-2 cloves roasted garlic

½ cup organic milk

¼ cup olive oil butter or organic butter

Sea salt & black pepper to taste.

  1. Place potatoes on a large pot with enough water to cover. Bring to a boil over high heat, then reduce heat to medium-low. cover and simmer until tender, 15 to 20 minutes. Drain.
  2. Meanwhile, roast the garlic and artichokes until tender and lightly brown.
  3. Place drained potatoes in a mixing bowl, along with roasted garlic, artichokes, milk, butter, salt, and pepper.
  4. If you are preparing this early and need to reheat, simply dab with fresh butter before re-heating.
  5. Enjoy!
