Avocado-Kale Salad

Ingredients:

1 head kale, shredded

1 c avocado, chopped

2 scallions, chopped

1 c tomato, diced

2 ½ T olive oil

1 ½ T fresh lemon juice

Sea Salt to taste

Black pepper to taste


  1. Toss all ingredients together in mixing bowl. Squeeze as you mix to 'wilt' the kale and to cream the avocado.
  2. Serve immediately.
