Banana Nut Bread

Ingredients:

½ cup extra virgin olive oil

2 eggs

1 tsp Stevia powder

2 TB molasses

2 large bananas, mashed

1 tsp baking soda (aluminum free)

¼ tsp sea salt

2 cups whole wheat flour

½ cup vanilla yogurt

1 tsp vanilla extract

½ cup coarsely chopped walnuts


  1. Cream together oil, Stevia, molasses, vanilla, and eggs. Add in mashed bananas.
  2. Mix all dry ingredients in a separate bowl, then add to banana mixture – alternating with yogurt.
  3. Fold in chopped nuts.
  4. Place in greased (olive oil spray) loaf pan and bake at 350 degrees for 50-60 minutes, or until tests done.
