Crock Pot Barley Casserole


1 cup uncooked pearl barley

½ cup organic vegetable juice (something similar to V-8)

¼ tsp black pepper

1 yellow onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 cup mushrooms, chopped

2½ cups vegetable broth

2-3 generous handfuls pinenuts, toasted

Grated cheese, for sprinkling

  1. Combine all ingredients, except pine nuts, in a 3-4 quart slow cooker.
  2. Cover and cook on low for 6-8 hours, until barley and vegetables are tender.
  3. Sprinkle with pine nuts and grated cheese before serving.
