Cauliflower & Broccoli in Tomato Sauce


2 ½ lb mixed florets of broccoli and cauliflower

¼ cup extra virgin olive oil

1 onion, finely choppe

14-ounce can diced tomatoes

3 tablespoons tomato paste

3 tablespoons whole wheat flour

1 ¼ cups organic skim milk

1 ¼ cups water

Sea salt & black pepper, to taste

  1. Mix onion, chopped tomatoes and tomato paste in a small sauce pan with olive oil.  Bring to a boil and let simmer gently for 15-20 minutes, stirring occasionally.
  2. Mix the flour to a paste with a little of the milk.  Stir paste into the tomato mixture, then gradually add remaining milk and water.
  3. Stir mixture constantly until it boils and thickens.  Season with salt and pepper; keep sauce hot.
  4. Steam cauliflower and broccoli until soft, but not mushy (about 7 minutes).  Transfer the vegetables to a dish and pour tomato sauce over them, serving with extra pepper and/or grated cheese on top, if you like…delicious with fresh parsley or basil on top.
  5. Serves 6.
