Cashew Ranch Dressing

Ingredients:

1 cup cashews, soaked

1 cup filtered water

2 large medjool dates

½ cup extra virgin olive oil

¼ cup chopped onion (I prefer scallions)

½ tsp sea salt

1 tsp ground pepper

1-2 cloves garlic

Juice of 2 lemons

Small splash of apple cider vinegar

1 tsp dill (dried—more if using fresh)


  1. Blend all ingredients in a blender until smooth.
  2. To make as a dip or nori roll spread, use less water and leave thicker.
  3. Enjoy!
