Cinnamon Cashew Cookies

Olive oil butter is wonderful to have on-hand and is very easily made.  Simply mix equal parts melted organic butter and pure extra virgin olive oil together, and let mixture chill in the fridge overnight. This is ideally kept in a glass jar or container, and can be used anytime you would normally use butter in a recipe.


½ cup old-fashioned rolled oats

½ cup whole wheat pastry flour

1/3 cup toasted wheat germ

2 tsp cinnamon

½ tsp sea salt

1 tsp Stevia powder

½ cup cashew butter

¼ cup olive oil butter

1/3 cup milled flaxseed

½ cups water

2 tsp vanilla extract

3 dozen lightly salted cashew halves

1 TB molasses

  1. Preheat oven to 350 degrees.
  2. Place oats, flour, wheat germ, cinnamon, and salt in food processor and pulse until finely ground.  Set aside.
  3. Combine Stevia, molasses, cashew butter, olive oil butter, and vanilla in a large mixing bowl.  Beat until well-blended.
  4. Put flaxseed in small bowl and add in water.  Beat into cashew butter mixture.  Now beat all ingredients into oat mixture (batter will be sticky).
