Creamy Pesto Dressing


Large bunch fresh basil (full blender)

1/3 cup extra virgin olive oil

1-2 handfuls raw cashews

½ tablespoon garlic powder (or 1 fresh garlic clove)

Sea Salt to taste

Black pepper to taste

Fresh lemon juice (optional)

Water as needed for proper consistency

  1. Blend all ingredients in a blender until smooth.
  2. Enjoy on zucchini spaghetti, as a salad dressing, or as a dip (use less water for a thicker dip)
