Garlic Roasted Potatoes

Ingredients:

1 ½  pounds potatoes, peeled and cut into thin wedges

1 tablespoon olive oil

3 garlic cloves, crushed

1 ½  teaspoons rosemary, chopped

1 ½  teaspoons parsley, chopped

½  teaspoon mustard

1 tablespoon lemon juice


  1. Place potatoes on baking trays coated with nonstick cooking spray (nonfat). Bake at 375 degrees Fahrenheit (190 deg C) for 30-35 minutes. 
  2. Combine next six ingredients in a bowl. Stir in potatoes and toss until coated. Spray potatoes with nonstick cooking spray (nonfat) and return to oven about 4 -5 inches from heat element.
  3. Broil eight to 10 minutes, stirring occasionally.
