Yummy Hummus


5 cups chickpeas from a can, rinsed

1-2 cloves garlic (to your taste)

Juice of 2 lemons

3 heaping TB tahini

2 TB extra virgin olive oil

½ tsp cumin

Sea salt and pepper to taste

  1. Process chickpeas in a food processor until smooth.  Add lemon juice, olive oil, garlic, tahini, cumin, and salt and blend until creamy.
  2. Season with pepper, olive oil drizzle, and chopped fresh herbs that you like (I use fresh flat-leaf parsley or scallions).
  3. Serve with cut up vegetables, whole grain crackers, or whole wheat pita.  It can also be used as a spread in sandwiches and wraps.
