Italian Bean Salad

Ingredients:

Group 1

19-oz can red kidney beans, drained and rinsed

½ cup Medjool dates

19-oz can cannellini beans, drained and rinsed

½ cup chopped scallions

½ cup chopped celery

½ cup chopped bell pepper

2 tablespoons snipped fresh parsley


Group 2:

2 tablespoons dijon mustard

½  teaspoon dried oregano

¼  teaspoon black pepper

½ teaspoon sea salt 

pinch garlic powder

¼  cup fresh lemon juice

¼ cup extra virgin olive oil

splash apple cider vinegar


  1. Place the ingredients in Group 1 in a large bowl. Mix.
  2. Place the ingredients in Group 2 in a small bowl. Mix well. Pour over the bean mixture and toss to coat.
  3. Chill before serving.
