Lettuce Wraps

Ingredients:

1-2 very ripe avocados

3 tomatoes, diced

1/2 sweet bell pepper, diced

2 tbsp scallions, diced

Pinch garlic powder

1/4 cup fresh cilantro, chopped - optional

kernels from one ear raw corn on the cob (do not cook)

2 tsp fresh lime or lemon juice

6-8 large romaine lettuce leaves

Sea salt or pepper to taste


  1. In a medium-sized bowl, mash the avocado. 
  2. Add remaining ingredients and stir until well-mixed.Spread 2-3 TB of mixture onoto lettuce leaves and wrap or fold like you would a taco.  Enjoy!
