Broiled Salmon with Lemon & Dill


½ cup fresh dill weed

1-3 TB extra virgin olive oil

1 clove garlic, minced or crushed

1 tsp sea salt

Black pepper to taste

2 TB fresh lemon juice

4 (3/4” thick or so) fresh salmon filets (wild Alaskan salmon is best)

  1. Combine dill, olive oil, garlic, salt, pepper, and lemon juice in a large glass dish and mix well.  Remove 2 tablespoons of marinade and set aside.
  2. Add salmon steaks to the remaining marinade; let stand, covered in refrigerator for about 10 minutes.  Preheat the broiler.
  3. Arrange salmon on broiling rack that has been sprayed with EVOO spray.  Brush with 1 TB of reserved marinade.  Broil about 6 inches from the heat source for 3-4 minutes.
  4. Turn salmon over and brush with remaining marinade.  Broil for another 3-4 minutes, or until fish flakes easily with a fork.
  5. Serve with extra lemon wedges and enjoy with veggies, rice, or over a salad.
