Spinach & Barley Sauté

Ingredients:

Fresh spinach

Fresh garlic, sliced

Extra virgin olive oil

Marinated artichoke hearts

Salt and pepper to taste

Pearl barley


  1. Prepare barley as directed on package.
  2. Sauté slivered garlic in olive oil with salt and pepper to taste.  Add fresh spinach and stir occasionally.
  3. Slice artichoke hearts and place face down on a baking sheet (lightly line baking sheet with olive oil).  Bake until gently roasted.
  4. Add cooked barley to spinach and continue to sauté for a few minutes.  Remove from heat and add artichoke hearts.  Stir and serve immediately as a side dish or over grilled chicken.
