Greek Spinach & Feta Pasta
with Toasted Almonds

8 oz. mushrooms, sliced

16 oz. whole wheat pasta

5 cups loosely packed spinach

2 garlic cloves, minced

1 cup vegetable or chicken broth

1 (6 oz) can pitted black olives, halved

½ cup feta cheese

¼ cup slivered almonds

Extra Virgin Olive Oil

Sea Salt and black pepper, to taste

  1. Place mushrooms in a large frying pan with a little EVOO and one clove garlic.  Add a little salt and pepper, and sauté for about 5 minutes.
  2. Add spinach, remainder of garlic, olives, and almonds and sauté for an additional 5 minutes or so.
  3. Add cooked pasta and broth and season more if needed. 
  4. Top with feta cheese and serve.
