Stuffed Tomatoes


6 medium tomatoes

½ cucumber

½-1 avocado, diced

2 sticks celery, chopped

2 scallions, chopped

Dash garlic powder

Sea salt and pepper to taste

Fresh lime juice, to taste

  1. Cut tomatoes in half and scoop out a good portion of the inside flesh.  Chop the insides and add to the rest of above ingredients.  Mix well.
  2. Scoop mixture into tomato halves and serve.
