Vegetable Fritatta


1 yellow onion

1 red bell pepper

½ bunch asparagus, cut into pieces

broccoli florets

6-8 eggs, depending on size

Sea salt to taste

Black pepper to taste

Dash garlic powder

Dash milk

Grated cheese and/or shredded mozzarella 

  1. Sauté the onions, peppers, asparagus, and broccoli in a pan with extra virgin olive oil. Season with salt, pepper, and garlic powder.  Add a little grated cheese if desired.
  2. While the vegetables are cooking, in a separate bowl crack all the eggs.  Add salt, pepper, and milk and beat well with a fork until imulsified.
  3. Once vegetables are tender enough for eating, pour egg mixture over the vegetables and allow to cook for a few minutes (over medium heat).   Continue to flip/mix frittata with a spatula every few minutes until eggs are cooked well, but not brown.
  4. If you are adding mozzarella, you can sprinkle it on at this time, and mix eggs once again.  If you are not adding shredded cheese, add more grated cheese at tis point, and mix again.
  5. Sprinkle with additional salt and pepper if necessary (taste first) and serve.
