Zucchini Salad


1-2 zucchini, cut in long slivers

½ cup yellow pepper, chopped 

1-2 Roma tomatoes, chopped

1 TB extra virgin olive oil

1 TB lemon juice

handful chives or scallions, chopped

½ avocado, chopped

4 or 5 raw green olives, chopped 

Dash garlic powder

Sea salt and black pepper – to taste

  1. Mix all ingredients together until well-combined.
  2. Eat over as-is, or place on a bed of mixed field greens and enjoy!
